My mom always makes delicious peanut butter cookies, and I wanted to create a recipe for her based on those happy memories. It’s a happy coincidence that I get to post this recipe on Mother’s Day for her! These Soft Peanut Butter Cookies are chewy, salty-sweet, and so easy to make. Tips for the Best Peanut Butter Cookies

Making the Dough

These Soft Peanut Butter Cookies are easy to make. Start by mixing softened unsalted butter and peanut butter in a large bowl. Cream in the brown sugar and granulated sugar. Once the sugars have been incorporated, add the egg and vanilla. As a last step, add the dry ingredients – the all-purpose flour, baking powder, and salt. Once everything is mixed together, it’s ready to bake. No chilling necessary!

Baking

Scoop the cookies onto a baking sheet and flatten with a fork to achieve those classic peanut butter cookie ridges. Bake at 350° F for about 10 minutes, or until the cookies are lightly browned on the edges. While the cookies are still warm, sprinkle with sugar. I like to use a larger, crunchy sugar like a turbinado or demerara sugar, but granulated sugar will work too. Transfer to a cooling rack and allow to cool fully.

Storage

These cookies will store well at room temperature for 4-5 days (although it’s unlikely they will last that long!). They are very soft, so don’t pack them too tightly into a container or they will likely break. These cookies also freeze well and will last about 2-3 months in the freezer. Best enjoyed at room temperature!

Ingredients

  • ½ cup unsalted butter softened
  • ¾ cup smooth peanut butter
  • ½ cup brown sugar packed
  • ½ cup granulated sugar
  • 1 egg
  • ½ tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp salt
  • cups all purpose flour

Instructions

  • Preheat oven to 350° F.

    I made these cookies for the second time! I love them! They were thick and chewy with a lot of great peanut butter taste. On a few of the cookies, I placed a thumbprint full of dark chocolate chips instead of the traditional peanut butter cookie crisscross. They tasted just like a Reese’s Peanut Butter Cup. Yum!
