How to Make Chocolate Chip Pound Cake
Making the Batter
Preheat your oven to 350°F and prep a loaf pan by greasing it and lining it with parchment paper. To make the batter, first cream together the butter and sugar in a stand mixer or large mixing bowl with a hand mixer. Cream them together until light and fluffy, about 5 minutes, scraping down the sides of the bowl as needed. Once the butter and sugar are well incorporated, add the eggs one at a time, mixing after each addition. Add the vanilla extract and sour cream, mixing until all ingredients are combined. Next, add the salt, baking soda, and flour. Mix just until the flour is completely incorporated before folding in the chocolate chips. Pour the batter into the prepared loaf pan and bake.
Baking
Bake the cake in a 350°F oven for 55-65 minutes, or until a tester inserted into the center of the cake comes out clean. The cake will have a golden brown crust. Transfer it to a cooling rack to cool completely before slicing. This will ensure that the cake stays moist and crumbles as little as possible. Eat it as is or glaze with a simple powdered sugar icing, like I did. Enjoy!
Storage
This cake stores well at room temperature in an airtight container for 3-4 days. To freeze, wrap individual slices tightly with plastic wrap and store in the freezer, for up to two months. This cake does taste best at room temperature, so be sure to allow it to defrost completely before eating.
