S’mores Bars

These S’mores Bars are the perfect summer treat. Whether you’re craving s’mores but don’t have a fire pit, want a s’more with less mess, or just want to try a new version of a s’more, these bars are for you! They have a graham cracker cookie base full of chocolate chips, are filled with marshmallow fluff, and topped with more toasted marshmallow fluff, melty chocolate squares, and graham cracker pieces. It’s the perfect s’mores bite!

Tips for the Best S’mores Bars

Making the Cookie Base

This cookie base is a simple one! First, mix together softened butter and brown sugar. Add vanilla, egg, baking powder, and salt. Stir in the flour. Finally, add in the graham cracker crumbs and chocolate chips. Layer half of the cookie dough into the bottom of the prepared pan, making sure to cover the whole pan. Layer on some marshmallow fluff. It’s incredibly sticky, so I found it easiest to drop by the tablespoonful over the cookie dough before spreading. Finally, top with the remaining cookie dough. Since the marshmallow fluff is so sticky, it’s easiest to flatten pieces of cookie dough and press onto the fluff, rather than trying to spread it out. Bake at 350°F for 30 minutes, or until the edges of the cookie are golden brown.

Please note that using actual marshmallows in the cookie dough instead of marshmallow fluff will not work. The marshmallows will evaporate into the dough while baking, leaving a dense cookie with chewy, sugary patches. The marshmallow fluff can stand up to the heat of the oven, so it’s critical to use for the perfect S’mores Bars.

S’mores Topping

Once the cookie base is baked, top with the remaining marshmallow fluff and broil on low until it is that perfect toasty golden brown, about 2 minutes. Make sure to keep an eye on it- the fluff can go from toasty to burnt quickly! Check every 30 seconds while broiling. Immediately after removing from the oven, press the chocolate squares and graham cracker pieces into the toasted marshmallow fluff. This will ensure that they stick well and that they chocolate gets to that perfect, melty consistency. I like to use Hershey’s milk chocolate squares for topping because that’s my perfect, classic s’more, but you can use whatever chocolate you like!

Cooling and Cutting

It’s important to let the bars cool fully in the pan for easy removal and cutting to get beautiful, clean sliced bars. Be sure to grease and line the pan with parchment paper so that you can just lift the bars out for cutting once they are cool. Slice carefully with a sharp knife into equal sized pieces before serving. However, if you don’t really care what they look like, these bars would be delicious eaten straight out of the pan as well. Just cut and serve directly from the pan – it might be a bit more messy, but will taste just as good!

Storage

Once cooled, these bars store well in a covered container at room temperature for 3-4 days, although they definitely won’t last that long. People will keep coming back for s’more! The tops of the bars are sticky with toasted marshmallow fluff, so I would recommend storing in one layer only.

Ingredients

  • ½ cup (115 g) unsalted butter softened
  • ½ cup (135 g) brown sugar packed
  • 1 egg
  • 1 tsp (4 g) vanilla extract
  • 1 tsp (4 g) baking powder
  • ½ tsp (2 g) salt
  • cup (200g) all purpose flour
  • ½ cup (50 g) graham cracker crumbs
  • ½ cup (100 g) semisweet chocolate chips
  • 1 cup (100 g) marshmallow fluff divided
  • ½ cup graham cracker pieces (approximately 1-2 crackers) for topping
  • ½ cup chocolate squares (approximately 8 squares) for topping

Instructions

  • Preheat oven to 350°F. Prepare an 8×8 baking dish by greasing and lining with parchment paper.
  • In a large mixing bowl, cream together the softened butter and brown sugar.
  • Stir in the egg and vanilla extract.
  • Add the baking powder and salt. Stir to combine.
  • Stir in the flour.
  • Add the graham cracker crumbs and chocolate chips. Stir until evenly distributed.
  • Press half of the cookie dough into the bottom of the prepared pan.
  • Top with ½ cup of marshmallow fluff (half of the total amount). Reserve the remaining ½ cup.
  • Top with the remainder of the cookie dough.
  • Bake at 350°F for 30 minutes, or until cookie bars are golden around the edges.
  • Top the cookie bars with the remaining ½ cup of marshmallow fluff.
  • Broil on low for approximately 2 minutes, or until marshmallow fluff is toasted golden brown.
  • Remove from the oven. While the marshmallow topping is still warm, press chocolate squares and graham cracker pieces into the toasted marshmallow fluff.
  • Let cool completely before removing from pan by lifting with the parchment paper.
  • Carefully slice into 16 squares. Serve and enjoy!
