I love Oreos, so I knew that if I was going to make a cookie with sandwich cookies baked in, it had to be worth the effort. Otherwise, why not just eat the Oreos? These Cookies and Cream Cookies are definitely worth it. The soft cream base contrasts perfectly with the chocolatey sandwich cookie bits. Don’t skip the cookie pieces on top – they provide the crunch that contributes to a truly exquisite bite!

These cookies have a cream cheese base, which makes them extra soft and gives the ‘cream’ flavor for cookies and cream. Just beat the room temperature butter and cream cheese together before adding the sugar. Ingredients

  • ½ cup unsalted butter room temperature
  • ½ cup cream cheese room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla
  • ¾ tsp baking powder
  • ½ tsp salt
  • 1 ½ cups all purpose flour
  • 1 ½ cups roughly chopped chocolate sandwich cookies about 16 cookies
  • 4-6 sandwich cookies broken into pieces for topping

Instructions

  • Preheat oven to 350°F.
  • In a large mixing bowl or stand mixer, cream together butter, cream cheese, and granulated sugar.
  • Add the egg and vanilla. Mix until combined.
  • Add the baking powder and salt. Next, mix in the flour to form a soft dough.
  • Stir in the 1 ½ cups chopped sandwich cookies.
  • Scoop onto a prepare baking tray, about 2 tbsp of dough per cookie. Lightly flatten each cookie and top with a piece of sandwich cookie.
  • Bake at 350°F for 8-10 minutes, or until cookies are lightly browned on the edges. They will be slightly soft in the center, but should not look wet. Allow to sit on the cookie sheet for 2 minutes, or until the centers are set. Enjoy!
