Orange Pistachio Muffins

Orange Pistachio is my new favorite flavor of muffin! I love a citrusy muffin, and the pistachios are the perfect pairing. They’re lightly sweet, full of bright orange flavor, and have a nice salty crunch from the pistachios. Plus, this recipe comes together really quickly, making this perfect for a weekend breakfast or side for dinner. Follow the tips and recipe below if you want to try them out for yourself. Tips for the Best Orange Pistachio Muffins

Mix Wet and Dry Ingredients Separately

Although it might be tempting to throw all of the ingredients in one big bowl and mix, it’s really important to mix the wet and dry ingredients in separate bowls before combining them – this is called the muffin method. Using the muffin method limits the amount of gluten formed when mixing the batter, which will result in more tender and fluffy muffins. It also helps prevent overmixing.

Don’t Overmix

Overmixing muffin batter is easier than you might think! To achieve that perfect fluffy texture for these Orange Pistachio muffins, stir the batter just until the dry ingredients are moistened. This will prevent the muffins from becoming tough. Overmixing muffin batter can also cause hole of tunnels in the muffins when fully baked, so stir until just combined. A few lumps in the batter is okay!

Filling the Pan

I like to use a scoop to portion out muffin batter. This ensures that the muffins are uniform and will bake evenly. If you don’t have a scoop, that’s okay! Try to portion the same amount of batter into each cup of the muffin tin; about 3/4 of the way full. Too full, and you’ll end up with one large muffin. Not full enough, and you won’t achieve those perfect muffin tops, which are my personal favorite part of the muffin!

Orange Pistachio Muffins

Ingredients

  • ½ cup granulated sugar
  • ½ cup brown sugar packed
  • 2 eggs
  • ½ cup Greek yogurt
  • ½ cup whole milk
  • ¼ cup vegetable oil
  • 1 tsp vanilla
  • zest of one orange
  • juice of one orange (approx. ¼ cup)
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup pistachios

Instructions

  • Preheat oven to 350°F. Grease or line a standard 12 cup muffin tin.
  • In a large mixing bowl, stir together the flour, baking powder, and salt.
  • In a separate, medium mixing bowl, whisk together the wet ingredients – the sugar, brown sugar, eggs, Greek yogurt, milk, vegetable, and vanilla. Whisk until combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not over mix.
  • Fold in pistachios so they are evenly dispersed.
  • Fill muffin tin with batter. Each muffin cup should be about 3/4 of the way full.
  • Bake at 350°F for 20-25 minutes, or until muffins are slightly golden on the edges and a tester inserted into the center comes out clean. Enjoy!
