Honey Oat Muffins

I’ve always loved getting creative with recipes, but this Honey Oat Muffin recipe is the one that really inspired me to start sharing them on a blog! I’ve always been creative with cooking, but this is the first recipe that I really thought through, and tweaked to improve. I’m so happy with how it turned out! The muffins come out fluffy, light, and sweet without being overpowering. My husband ate six of them the first day I made it – I can always tell how good a recipe is by how fast it disappears!

I can still remember my first time trying honey. I was five years old and my kindergarten class was having a teddy bear tea party – complete with peanut butter and honey sandwiches. I took one bite, decided I absolutely hated it, and swore I would never touch honey again. It took me over ten years before I tried honey again, and I’m so glad I did. Now, I have to take back that kindergarten resolution- honey is one of my favorite sweeteners, especially on toast, in oatmeal, and for baked goods. There’s something so comforting about a warm, sweet snack – for me, that’s a piece of bread warm from the oven, covered in butter, and drizzled in honey. I wanted to replicate those flavors and feelings in this quick and easy muffin.

They are delicious right out of the oven, but also freeze well and are great as part of a grab and go breakfast or snack. If you can’t already tell, I have a bit of a sweet tooth, so my favorite way to enjoy them is fresh from the oven with an extra drizzle of honey over the top!

Honey Oat Muffins

Honey and oat muffins.

Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup packed brown sugar
  • 1/4 cup honey
  • 2 eggs
  • 1 tsp vanilla
  • 1 3/4 cups all purpose flour
  • 1 cup rolled oats
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup whole milk

Instructions

  • In a large mixing bowl, cream together butter and packed brown sugar. When completely combined, add in honey.
  • Add in vanilla. Add eggs one at a time, mixing each in completely before adding the next.
  •  In a medium bowl, stir together flour, 1 cup oats, salt, and baking powder until fully combined.
  • Add ½ of the dry ingredients into the butter mixture, and mix until just combined. Add ½ cup of the milk and stir. Repeat with the remaining ½ of the dry ingredients and the remainder of the milk.
  • Portion into a greased or lined muffin tin.Sprinkle remaining 1 tbsp of oats over the top of the muffin.
  • Bake at 350°F for 20-25 minutes, or until a toothpick inserted into the muffins comes out clean.

    Delicious — made these this morning for a family breakfast. Boy did they disappear quickly — everyone loved them! Quick and easy! We will definitely be making these again. And an added bonus — the kitchen smelled great while they were baking! Thanks for the great recipe!
