Tips for the Best Cardamom Brown Butter Waffles with Pear Compote

Making the Batter

To make the waffle batter, start by browning butter in a saucepan over medium heat. Stir consistently until the water is evaporated and the butter starts to brown. You will see brown specks appear at the bottom of the pan and the overall color will become darker. Stir constantly to ensure that the butter doesn’t burn!

Next, pour the browned butter into a large mixing bowl and allow to cool. Once cool, stir in the brown sugar, eggs, and vanilla extract. Add the flour, baking powder, salt, and cardamom, followed by the milk. Stir until all ingredients are incorporated. The batter may still be slightly lumpy, and that’s okay. For extra crispy waffles, rest and chill the batter in the refrigerator while preheating your waffle iron. A cold batter will produce a more airy and crispy waffle!

Cooking the Waffles

Cook these waffles as you would any other in your waffle iron. The batter does expand while cooking, so I’ve found that it’s best to use a heaping ½ cup to fill the iron (you may need more or less, depending on the size of your iron). For extra crispy waffles, reheat in the oven at 350°F for 5-7 minutes before serving. For best flavor, serve with pear compote, but maple syrup is a delicious topping, too!

Making the Pear Compote

This pear compote is a great way to use up any pears that aren’t perfectly ripe. Start by peeling and dicing 4 pears. Melt the butter in a saucepan over medium heat before adding the diced pears. Add the sugar, salt, and cardamom. Stir frequently and allow to cook until pears are soft to your liking, approximately 10 minutes. Turn off the heat before stirring in the vanilla extract. Serve over the Cardamom Brown Butter Waffles!

Storage

These waffles will keep well in a sealed container at room temperature for 2-3 days. I’d recommend reheating in an oven or toaster oven for best texture with leftover waffles! The waffles also freeze well – I often make a double batch and freeze for breakfasts throughout the week! To reheat, place in a toaster or toaster oven from frozen and cook until warmed through. When frozen, they will keep for 2-3 months, but they will probably get eaten long before that!

Ingredients

Cardamom and Brown Butter Waffles

  • ½ cup (115 g) unsalted butter browned
  • ¼ cup (60 g) brown sugar packed
  • 2 eggs
  • 1 tsp (4 g) vanilla extract
  • 2 cups (250 g) all purpose flour
  • 1 tbsp (12 g) baking powder
  • ½ tsp (2 g) salt
  • ½ tsp (1 g) cardamom
  • 1 ¾ cup (415 g) whole milk

Pear Compote

  • 4 pears peeled and diced
  • 2 tbsp (30 g) unsalted butter
  • ½ tsp (2 g) salt
  • ½ tsp (2 g) vanilla extract
  • 2 tbsp (25 g) granulated sugar
  • ¼ tsp (<1 g) cardamom

Instructions

Cardamom and Brown Butter Waffles

  • In a saucepan, brown the butter over medium heat, stirring consistently.
  • Pour the browned butter into a large mixing bowl and allow to cool.
  • Once cool, stir in the brown sugar, eggs, and vanilla extract.
  • Add the dry ingredients: the flour, baking powder, salt, and cardamom.
  • Add the milk and stir until all ingredients are combined. The batter may still be a little lumpy.

  • Peel and dice 4 pears.
