Butterscotch Blondies

These Butterscotch Blondies are soft, chewy, and absolutely delicious! I often think blondies can be a little too sweet, but these are buttery with the perfect amount of sweetness. Classic blondies are a brown sugar based bar, but these have that extra caramel note from the butterscotch chips. For more butterscotch flavor, top with a handful of butterscotch chips before baking. This dessert will not disappoint!

Making the Best Butterscotch Blondies

Sometimes I want a quick, simple, one-bowl recipe that produces delicious treats in under an hour. This is that recipe! These Butterscotch Blondies are so easy to make! To start, preheat your oven to 350°F. Prep an 8×8 inch baking dish. Either grease the pan well, or line with parchment paper to ensure that the bars come out of the pan easily.

To make the batter, melt one cup of butterscotch chips with the unsalted butter in a large, microwave safe bowl. I recommend microwaving in 30 second intervals, stirring after each one, until all the chips are melted into the butter. Once melted, stir in the brown sugar. Add eggs one at a time, stirring after each addition. Next, add the vanilla extract. Finally, stir in the flour, baking powder, and salt until just combined.

Pour the batter into the prepared pan and top with additional butterscotch chips, if desired. Bake at 350°F for approximately 30 minutes, or until the top of the bars are golden. Let cool before slicing and serving. This recipe will make approximately 16 2×2 inch bars.

Ingredients

  • ½ cup unsalted butter
  • ¾ cup brown sugar
  • 1 cup butterscotch chips

Instructions
