Blueberry Crumble Bars

I love fruit desserts. They are so bright, sweet, and tart, all at once! These Blueberry Crumble Bars definitely fall into that category. It’s the perfect summer treat, but also a great treat to make in the winter to brighten up any day.

This recipe is a simple one. There are few ingredients, and it’s easy to put together. Despite this, the bars are beautiful and would impress at any party! The topping and the crumble base are made from the same mixture, and the blueberry filling comes together in just about 5 minutes, while the base is baking in the oven.

If you don’t have blueberries, any other berry would work just as well in this recipe- even mixed berries. I used fresh berries because I needed to use them up, but frozen berries would work just as well. If you end up using a larger berry like a strawberry, I’d recommend chopping them into smaller pieces and mashing them while you stir so that the filling is a little more smooth.

These Blueberry Crumble Bars are very reminiscent of summer – which is something I definitely need as we head into the depths of winter. They’re sweet, buttery, and slightly tart, and the crispy oat base contrasts perfectly with the jammy filling. It’s one of my favorite combinations! Blueberry Crumble Bars

Ingredients

Crumble

  • ½ cup unsalted butter melted
  • 1 cup flour
  • 1 ½ cup oats
  • ¾ cup brown sugar
  • 1 tsp salt

Blueberry Filling

  • 2 cups blueberries
  • ¼ cup sugar
  • ¼ cup + 1 tbsp water divided
  • 1 tbsp cornstarch
  • 1 tsp lemon juice

Instructions

Crumble

  • Preheat oven to 350°F. Grease a 9×9 baking dish and set aside.
  • Mix melted butter, flour, oats, brown sugar, and salt in a bowl. Stir until combined. Mixture should be crumbly but hold together in clumps when pressed.
  • Press ⅔ of the crumble mixture into the 9×9 pan. Reserve the remaining ⅓ of the crumble to top the blueberry filling.
  • Place the pan in the oven and bake for 10 minutes, or until crumble base browns lightly.

Blueberry Filling

  • In a saucepan over medium heat, mix blueberries, sugar, and 1/4 cup water. Bring to a boil.
  • In a separate, small bowl, mix cornstarch and 1 tbsp water to form a slurry. Pour the slurry into the blueberry mixture and stir until thickened.
  • Continue to cook on the stove until the mixture begins to bubble and thickens enough to coat the back of a spoon.
  • Spread blueberry filling over the baked crumble base. Top with remaining ⅓ of the crumble mixture.
  • Return to the oven and bake for another 20 minutes, or until crumble topping is browned and blueberry filling is bubbling.
  • Let cool completely before slicing. Enjoy!
