Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
Pour the mini M&Ms into a medium sized bowl and set aside.
In a separate, large mixing bowl, cream together the butter, sugar, and brown sugar until well combined.
Mix in the egg and vanilla extract.
Add the baking soda, salt, and flour. Stir until all of the flour has been incorporated.
Fold in the chocolate chips.
Scoop the cookie dough into balls, each containing about 2 tbsp of dough. Press and roll each ball into the mini M&Ms to form a crust.
Place the mini M&M crusted dough balls onto the baking sheet, about 2 inches apart, and flatten them slightly.
Bake at 350°F for 10-12 minutes, or until the edges of the cookies are lightly golden brown and the centers are set.
Allow the cookies to cool slightly and enjoy!
