Chocolate Peanut Caramel Cookies

Ingredients

  • ½ cup (115 g) unsalted butter softened
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) brown sugar
  • 1 egg
  • 1 tsp (4 g) vanilla extract
  • 1 tsp (4 g) baking soda
  • ¼ tsp (~1 g) salt
  • ½ cup (30 g) cocoa powder
  • 1 ½ cups (200 g) all purpose flour
  • ½ cup ( 50 g) chopped peanuts
  • ¾ cup (100 g) chopped soft caramels or chocolate covered caramels

Instructions

  • Preheat oven to 350°F.
  • In a large mixing bowl, cream together the butter, sugar, and brown sugar until smooth.
  • Add the egg, vanilla extract, baking soda, and salt. Stir to combine.
  • Mix in the cocoa powder and flour.
  • Stir in the chopped peanuts and caramels. Stir to distribute evenly throughout the batter.
  • Scoop in 2 tbsp measures onto a baking sheet and bake for about 10 minutes, until cookies are crisp around the edges.
  • Let them cool and enjoy!
